Amazing Muffins and So long AT&T!!!

I felt very Martha-ish this morning and made muffins for the chicks. Don't let the sugar crystals fool you, these are healthy (there are worse choices) and fabulous with or without butter.

It's ok to drool.......

Amazing Morning Muffins

1 cup whole wheat/white flour blend
1 1/2 teaspoon of baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon pumpkin pie spice (you can use cinnamon)
1 large egg
2/3 cup vanilla yogurt
1/3 cup brown sugar
1 teaspoon vanilla

Preheat oven to 400. Spray a six cup muffin tin with oil.

Whisk flour, powder, soda, salt and pie spice in a medium bowl. In a smaller bowl whisk together egg, yogurt, sugar and vanilla. Add wet ingredients to the dry stuff and gently mix together. Batter will be lumpy, but you knew that.

Fill the muffin tin and bake 13-15 minutes. Try to let them cool a bit before eating but if you burn your fingers trying to get them out of the tin then I understand.

The second thing for today is that we have chucked AT&T and now have Cox for internet. It is way faster and we are told the customer service is better. It cannot be worse than AT&T. We have been living an AT&T nightmare since Christmas and I am glad to be rid of them! So, I'm grateful to George for setting me up with faster and smoother internet.
